StrawCotti Cheesecake draws from two lineages that sit close together in the dessert-adjacent aromatic space but each bring something distinct to the blend. Biscotti, from Gelato and South Florida OG, contributes sweet-baked, earthy and spice-adjacent aromatic compounds. It's a warm, grounded profile that provides the structural depth of the blend. Strawberry Cheesecake brings sweet berry-adjacent and creamy primary notes that lead the blend at the top level. The berry character is vivid and fruit-forward without being sharp or tart, and the creamy cheesecake character from the Strawberry Cheesecake side adds a smoothness that ties the two lineages together. In the cup the berry and creamy notes come through early and the sweet-baked earthy depth from the Biscotti side develops as the brew steeps.

How to brew: add a small amount to your infuser or tea bag. Pour water at around 80°C. Steep for 4 to 5 minutes. A splash of full-fat or oat milk helps the fat-soluble compounds integrate into the brew. The extract won't fully dissolve and that's completely normal.
